It’s taco night with a twist.
Jessica thought it would be fun to make shrimp tacos with some pepper jack cheese, fry them up in a skillet and top with a delicious sauce.
The sauce is a creamy combination of cilantro, mint, mayonnaise, yogurt or sour cream, jalapeños, garlic, lime and red wine vinegar.
“This sauce, honestly, you can put it on anything,” Jessica exclaimed.

Ingredients:
Handful of cilantro
Handful of mint
½ cup mayonnaise
½ cup sour cream or yogurt
½ jalapeño, remove veins and seeds
clove garlic
splash of red wine vinegar
lime
Shredded jalapeño jack cheese
Smaller Shrimp peeled and deveined
Avocado
Pumpkin seeds
Smoked paprika
Garlic powder
Chipotle powder
Avocado cubed
Lime wedges
Instructions:
- Blend the cilantro, mint, mayonnaise, sour cream, jalapeño, garlic, lime, red wine vinegar and a drizzle of olive oil.
- Toast up pumpkin seeds in a pan.
- Season shrimp with salt, smoked paprika, garlic powder and a tiny bit of chipotle powder.
- Sautee shrimp until pink and cooked through and add a squeeze of lime.
- Add shredded cheese and shrimp to a tortilla and fold it over.
- Add multiple tacos to a skillet with olive oil and lightly fry on each side until crispy.
- Plate tacos, drizzle with sauce and garnish with cubed avocado, cilantro, pumpkin seeds and jalapeño slices. Drizzle more sauce and serve with lime wedges.
